I think you must have been very unlucky. Every time I have flown in the PL cabin the service has been without issues. The one time that I asked for something (a pen and some paper) which again I asked for after about 15mins, the crew were so apologetic that for the rest of the flight it was almost embarrassing. Every time someone passed me, they would ask if I needed anything.

Yes, you cannot see the screen when it is stowed, but the only time you have to stow it is for take off and landing.
As for the food, whereas you might not like what they are offering, but you can pre select your meal from their website which gives you (usually) about four choices and it is certainly not economy food by a long way.
I know there are sometimes problems communicating with the crew due to language difficulties but this is a two way thing and has never caused any real problems.I can never understand the on board announcements due to heavy and different accents.
I have found on flights from London, if there is a light load in the cabin, you are usually escorted to your seat and asked if you would like a drink, when it’s a full cabin you are pointed in the right direction and a few minutes later someone appears asking about your pre take off drink and a hot towel.
I have taken about 30 flights in the PL cabin so I would say my experience is a vastly different experience to yours.
