Exactly. I booked a night at the Radisson Blu Nantes (it's in the old Palace of Justice) and looked at the dinner prices, then went "nope." I'll be the only one eating breakfast, so for 15 euro we'll get to experience the ambiance and historic building, and I can live with that. Obviously I wouldn't pay that same price for a run-of-the-mill Marriott buffet.
I shall definitely have to start looking more into Virtuoso or FHR. I knew they existed, but never gave them much thought. I usually book particularly upscale properties using points/a credit card free night, which of course you can't do through Virtuoso. Plus, I just looked up their "amenities for the Intercontinental Paris Le Grand and all you get is a 20% discount on spa services and a late checkout. No food/property credit.
I must say, though, that often the B&B rate seems to be much higher than just outright buying breakfast for one/two people. I've seen a $50 price difference between the "regular" rate and the "breakfast" rate at hotels where I'm pretty sure breakfast doesn't cost that much.
