Honestly, half the time I want to book breakfast precisely because I'm staying somewhere unique (the Waldorf Astoria, a unique Radisson Blu in a historical building) and I want to experience the atmosphere of the hotel. I guess that's the kind of thing you have to be willing to pay extra for.
Yes; and the more expensive rates a hotel has, the more likely they are to have higher prices for a given incidental item than the cheaper rate hotel -- even when talking about the same (or same type of) incidental item/service being charged.
This is an example of hotels squeezing the proverbial orange for as much juice as you can get out of it. And not all oranges are as easy or willing to be squeezed as other oranges.
