Honestly, half the time I want to book breakfast precisely because I'm staying somewhere unique (the Waldorf Astoria, a unique Radisson Blu in a historical building) and I want to experience the atmosphere of the hotel. I guess that's the kind of thing you have to be willing to pay extra for.
In reverse order:
I definitely understand the logic of wanting to experience a historic property via breakfast. Incidentally, it's far cheaper paying the full price or a B&B rate versus grabbing dinner.
The way that hotels charge for (or don't) amenities is counterintuitive to most people. When I go on tripadvisor, charged internet/breakfast are the number one complaints that infrequent/inexperienced travelers lodge (pun intended) against a full service or luxury property. On the surface, I can't blame someone used to Hampton Inns giving free (often good) wifi and an acceptable breakfast yet having to pay $18 for coffee, 2 scrambled eggs, and toast + $20/day for wifi at the $500/nt property they selected for their 40th anniversary getaway.
