You should be getting about 6 glasses per bottle, but I can see why BA might like to have a slightly smaller glass both to even out the onboard consumption and to have a glass that will be stable in the face of some turbulence and fit well in the table setting.
Maybe I'm just lucky, but I order champagne literally every long haul flight I take and have never had a glass fall over during turbulence (if it gets particularly bad, you just hold onto the glass), so don't tend to accept stability means airlines need to compromise on design of glasses.
