My husband and I went to Tante Louise for my birthday last year and it was wonderful. Excellent food in a romantic setting. The service was great and very attentive. I highly recommend the bread pudding for dessert.
We went to Flagstaff House (in Boulder) for Valentine's...great food but way overpriced, great view also. If you've got the money to blow, go for it! We enjoyed it but it was definitely a once is enough thing for us (and our bank account).
Brook's is also very good, but I would not recommend it if you're looking for a romantic setting, it's much more of a business dinner type of setting.
I've heard great things about Kevin Taylor, but we haven't made it there yet.
Also, if you don't mind a little drive, the Alpenglow Stube at Keystone Resort is fabulous. They have chef's tasting menu where you get 7 courses, you don't know what you're getting until it comes out, and everyone at the table will have something different. The food is excellent, and the setting is great....on top of a mountain, you have to take the gondola to get to it, open fireplace, etc. We've been there twice and loved it both times.
