I was there with my wife this weekend on a good deal (with our dog, as it happens). I thought it was very comfortable, but found the hard product was tired. We were in the old wing (I assume, as we didn't have AC). The staff were charming and pretty able, but perhaps I have low expectations. We didn't eat in the high end restaurant, but the other restaurant was not brilliant. The proposed spa looks spectacular.
Two comments- the implied criticism in your comments ref the nationality of the staff seems unfair. I actually found the manner of the foreign staff much more pleasing than the rather forced pretension of the british managers. Some of the young staff british or otherwise were great- Cederic in the bar particularly memorable for his charm and flair.
Secondly- Nyetimber (the english sparkling wine your refer to, assuming we received the same one) is objectively excellent- regularly wins awards etc
