Germany considers a (US) passport invalid if it doesn't have a signature. (does the US consider it valid?)
The airline should not have transported you to Germany with an invalid passport. An airline sued in German court when it was fined for transporting passengers without valid passport and lost.

Does it make sense to me (for practical purposes) that signing the same document prior to boarding would make it a valid passport? No, but then I am not a lawyer, and I generally don't think that the signature on a passport adds anything.
But ICAO members seem to still find value in having a signature.
