This is answered in the WIKI and many times above, on both points.

Relevant flights to the Chinese are the parts that touch China-- DTW-PVG-DTW. You won't even be allowed to board the plane to Shanghai since this does not meet the Country C requirement and thus requires a visa.

Do not attempt to try your subterfuge of booking another ticket like PVG-TYO as a ploy to allow you China-bound boarding in the USA, unless you fully intend to take it and abandon your original flight once you get to China. The Chinese will catch you at Immigration and will not be amused. Delta will likewise not be amused.

If you change your flights so the segments are YYZ-DTW-TYO-PVG-DTW-YYZ, then your journey becomes TYO-PVG-DTW and that is TWOV-eligible as long as the stop in PVG is within the 144 hours.
