I know this isn't in line with the luxury hotels forum, but in the English countryside, we tend to stay in 5 star rated B&Bs. I find we get much better, personalized service, with lots of thoughtful touches like small refrigerators, tea making facilities with actual milk, lots of help with local attractions, and fantastic breakfasts. It also opens up greater geographical flexibility, as they're easier to find than luxury country hotels.
