There is food service by the pools. It can take a bit for the staff to get around too you, and I found it easier to just go to the snack bar next to the pool to order and pick up the food myself (and getting a drink at the bar while waiting on the food).
At least while we were there in May, there also was a person with a little cart 10 feet from the pool that will make a quick soft taco or quesadilla as well as a big set of grills by the pool bar that would make up pretty decent things for lunch.
I was there a week so had the time to figure out what I liked and didn't like, but with only one day, you won't have that opportunity. In the snack bar, I liked the grilled shrimp tacos a lot. The fried fish tacos were a bit too much fry and not enough fish, but I think you can get a grilled fish taco as well.
I'd also recommend wandering over at lunch to the big grills (by the pool bar) to see what they have made.
I do believe you can rent a few of the pool cabanas, but the ones in the water appeared to be first come first serve.
