No, all certs need to be valid during your stay.

Comparing the Fairmont SIN to the properties in Hawaii is tough since they're very different in terms of style etc. The Fairmont SIN isn't my favourite Fairmont property, but the value proposition is fantastic (very nice, large suites; excellent lounge)

And I have no experience with whether the hotel charges an extra fee for more than 2 adults, sorry.
