2:30 is enough time for TBIT to T7 transfer if everything goes right.
GE is not going to help you if you check luggage so you should mentally prepare for at least 1 hour at TBIT. That gives you roughly another 1 hour to get to T7 check in before luggage cutoff.
Your odds improve significantly if you can get NZ to check your bags through to SFO... that way you can re-check the luggage at TBIT before leaving the secured area. And with online check in with UA, you should have plenty of time to walk over to T7.
