I do not understand. You peeked at what? If you mean the meal order pad how could you possibly see clearly or understand the abbreviations. We sometimes use just one letter (S = salad for example).
Depending on aircraft type there may be more than one Club cabin, or there may be two people taking the meal order. In this case they may have used the salads in a different section of the cabin.
I am sure they had just run out of Salad, we generally may only have 2-4 of them for 48 passengers as they are usually the least popular options. But sometimes they are more popular and we do sometimes run out.
It would be highly unlikely that they were not loaded (though this his a possibility).
There is the option to pre order your meal on line through the manage my booking section of ba.com, and then you would be pre allocated your choice before the orders are taken.
