IMO, 2 full days in Hue is okey but you seem to be going during the rainy season so if I were going I'd opt for 3 cause more likely then not you'll be getting wet at least one if the days.

Don't know how you're traveling the coast (from Hanoi to Saigon) but Hoi Ahn for a nights stop if driving is okey if coming down from Hanoi (coastal road over the mountains takes you via former French outposts but if speed and time are needed/desired there's a tunnel for a small charge)
Since time is tight in vietnam I planned on getting a flight from hanoi to hue, take train down to da nang/hoi an and then fly da nang to sgn. If I was travelling with other people and had a bit more time I probably would like the idea of driving down.

If you don't mind my asking, how much has the country changed since the war? Obviously cities can change quite a bit with the passage of time and all the development, but in terms of smaller towns and villages?
