I have had non transcontinental flights with lay flat seats, but you don't get the full menu, etc. Actually once on a flight from NY (either JFK or LGA, can't remember) to ATL we just got the usual snack basket.
Ditto with RDU - ATL which is on the 757 that comes in from CDG though they do fully provision the blankets and pillows (at least they have when I've been on it) but otherwise just snack basket (not surprising though since it's a very short flight, I dare say the shortest regularly scheduled DL lie-flat)
