At Miami area (for a base to visit Everglades Nat'l Park), Coral Gable Hyatt - an older but quite elegant Hyatt.
Key West - there are several Hyatt properties - they are the time-sharing properties but have day rate to rent. usually comes in 1 bedroom suite.
To visit Space center, you probably would base at Orlando. Grand Cypress would be a very nice choice.
Dali Museum - at St.Pete - so your Hyatt would be Grand Hyatt at Tampa.
As for Coconut Points - it is a very nice Hyatt Resort - but it doesn't fit into any one of those activities you want to do - if you look at its location on the Florida map. However, it would be excellent for relaxing, doing nothing but lazying on quiet beach (though far from a very nice beach).
I hope people making suggestions would really put an effort to address the OP's questions and needs rather than simply put in one's own preferences.
