Best case might be to book JFK-SEA-LAX-(stop)-HKG and buy a round trip LAX-LAS, which should be completely doable.
Why can't he do JFK-SEA-LAS-//stop-LAX-HKG? Above MPM?
Another alternative would be JFK-YVR-HKG all on CX and buying a separate YVR-LAS ticket, which is pretty cheap.
(or JFK-SEA-YVR/LAX-HKG with the SEA-LAS or LAX-LAS roundtrip bought, but that does add an extra flight)
