What do you propose Air Canada do?
Should they put a screen right after the confirmation screen but before the last "purchase" screen that says something along the lines of:
WARNING: You are buying an economy class ticket. You will be uncomfortable and the experience will suck, but it's only $499 to Frankfurt. If you want a better experience you should buy a higher class of service (e.g business class). That would manage expectations alright.
