JFK -> BCN via CDG Premium Economy

So I booked Premium Economy for me and my brother late in August, and I've tried searching this forum, and either I've missed it (quite possible), or it's not here (which I doubt). But here is where my question get funky:

1) I've noticed that when I booked my tickets, I was able to select my seats on flight from JFK -> CDG, but not on the flight from CDG -> BCN, but the site said that I would be able to "additional seat selection process will be offered at no charge when you check in online, starting 30 hours before your flight." All well and fine, but I've noticed there is no Premium Economy section on this flight (checked AF's seating chart, as well as Seat Guru). The plane is an Airbus A321. So if anyone has flown AF long haul, and had to connect for a short/medium haul, and has flown Premium Economy, how was that handled?

2) Almost the same question, how was that handled? Baggage, and switching terminals? I know I'm going to go through customs in CDG, but (from what I've found historically) my flight comes in at Terminal 2E and the connecting flight is leaving from 2F. I know with Premium Economy I have SkyPriority at checkpoints, but is 1 hour and 45 minutes enough time? I know CDG is relatively large, and my flight is scheduled to come in at around 8AM during the week, how crazy am I expecting? The last time I flew into Europe, I flew Icelandair into CDG, and was lucky enough to breeze through customs in Iceland in all of about 5 minutes.
