So if gate check is a pre-arranged thing for strollers, car seats etc. What is the correct term for. For the gate agent saying, "Oh my god you people have filled all the overhead bins with your carry on. We are going to have to check in all the remaining carry on.".

Under the same situation, the passenger perspective tends to be, "Oh my god, this airline has such little bin space with all these seats stuffed into this metal tube, and what little space there is has all these bags with little "crew" tags on them. Your going to have to do something with my carry on."

I thought that was called gate check..... Am I wrong?

As for the OP, you realise handing anything over at the gate involves a rushed baggage handler you want to get the flight out trying to carry the fragile item down some metal stairs attached to the side of bridge as quickly as humanly possible while not damaging it. Not the best situation.
