Unless you get AC to change the ticket/to rebook you, you will not be able to travel IST-SFO a day later. TK will refuse to touch this ticket and will not let you take a later flight. Period.

Probably not worth the time and to pay AC change fee to go sightseeing a few hours in Istanbul, so I suggest to fly as ticketed.
