If I had such a severe allergy I would take my own food and drink on planes and stick with it. I would say its borderline "irresponsible" for someone in your situation to eat the muffin without checking what was in it first. You would not give one to your child in the same situation without knowing it wont harm them so why take the chance at 40,000 feet.
