Allstate's website gives you several choices:
1) pay your balance due in full with a credit card
2) pay the monthly amount of your premium (e.g 1/12th of your premium plus a $3.50 fee a month for making monthly payments)
3) pay some other amount (I, for example, pay 3 months at a time so I just enter 1/4th of the yearly premium plus 3.50). If I wanted I could just enter $100 or any amount I want.

They also have an electronic withdrawal option from your checking account- same options as above. So you could combine payment by credit card with payment from your checking account. All they care is that they get the minimum payment specified, which is normally one month's premium.
