Unfortunately it doesn't work this way. Otherwise you wouldn't be required to buy an infant ticket. Also not to mention there won't be a meal prepared for two adults when you only have 1 adult and 1 infant ticket in C. You can redeem for 3 C awards or buy an infant ticket. I don't see any other way around this if you want to have all three of you in the C cabin.
