Las Vegas is the best choice for visiting the Grand Canyon, and then driving up to Moab for Arches. If your desired premium cabin does not show up for Las Vegas flights, Phoenix also works.

I cannot help with your strategy question, but just want to say I hope you have a hotel booked in your chosen eclipse-viewing location. Most places in the path of totality are pretty well booked up.
