I agree. One of the nicest people I've ever had the pleasure of meeting in the service industry. But it's not a bad thing. He left to start his own restaurant - AVLI, Mediterranean cuisine. 14 boulevard de Bonne Nouvelle. I've not been, but the reviews I've seen look very positive.
