IB had a press event today where they showed off the new Premium Economy cabin. A good video of it is in this article:

You can see that the right side lavatory at the back of the cabin has remained. I'd speculate that the lav that currently is opposite has been removed to make room on that side for the extra row of Premium Economy seats (there are four rows on the left side, and three rows in the middle and on the right side). The galleys don't seem to have moved and are still at the back of the cabin.

I'm speculating that they've removed the old row 1 in Business and installed one or two additional lavs at the front of the Business cabin.
