Yeah, it does seem like some redemption seats show up. I'm somewhat suspicious, though... Out of 12 flights that day, only two of them show up when trying to book with Avios (but both have exactly 4 seats available). Who knows - maybe all the other seats have been redeemed already - I *did* say August was a busy season for them... :P
I guess it's safe enough to book in advance, then cancel and book better-timed flights if they crop up nearer the date. After all, losing out on £2.10 (and having the Avios refunded) isn't going to be the end of the world...!
On another note, I assume if I purchase with Avios it means I cannot then upgrade to Business at the check-in desk (if available)? If I'm wrong, then how do the tier and Avios work in this scenario, as you usually get the underlying ticket which is - uh - going to be zero! :P
