This could be the best option, exactly as you lay out. More optionality.
Amex Gold for airline spending. 2pts:$1...and since 2 MR points = 1 SPG point, then you could convert to SPG if you need to.
Then the SPG card...use it for hotels. I can't remember the cutoff date, but currently you get 2 SPG points per $1 spent at SPG hotels.
If you really want to boost your point totals, do as JJonahJ says and pick up some other Amex cards to hit the minimum spending. But if you want the simpler approach..the Amex Gold + SPG combo is most effective.
