Note to OP -- you are presumably not talking about getting between LA and SF on I5 through the central valley, where the closest thing you will find to luxury is a Best Western (and even those are scarce, I can only think of one).

As DavidO notes, driving the coastal route SR1 will most likely not be an option this summer. So once you pass Santa Barbara, there are no choices until Carmel/Carmel Valley/Monterey, each of which is a 45 minute or so detour from 101.
