I have done back to back to back to back stays (and more). One day at a time. Same property. Same room. Just a different folio for each night. Each one counts as an individual stay. The IHG system does not reflect its own rules.
could be down to the individual IHG franchised hotel processing nights/stays correctly

ymmv trying to get two 5000 EQP/stay bonuses , if you only get one, as per IHG terms, there is noone/nowhere to complain to that you are due two lots of 5k EQPs
