I wondered about that. Of course AA allows ordering from T-30d to T-24h, but hardly ever upgrades anyone from the list these days until a few hours prior.
My guess is AA normally orders a set amount of meals per flight (50/50 or whatever) and the "orders" placed online are merely a reservation for that meal. A lot of times the FA just asks what I want even if I've reserved something.
Will be interesting how the AS system looks.
