DiegoSan and Moondog were spot on.
We are home and this is exactly what happened. For snacks, there were ham and cheese croissants and water sitting out in the gallery if you went up there during the flight. No other aisle service.
For future searchers, I will post our CAN (Guangzhou) -- JFK that was scheduled to depart 02:00 but didn't leave until almost 4:00am. Shortly after takeoff they came around with beverages and a choice of beef noodles or small hamburger. About six hours into the flight they served a full dinner. Two hours prior to arrival (15 hour flight), a large breakfast was served. There was no food or water set out in the galley at all in between, but you could ring for the attendant for a beverage.
