Logging in to Delta now does show 0 miles, so all is fixed.

A confirmation number can be issued immediately and has nothing to do with a ticket being issued. You know the ticket is issued once you have a ticket number available to you.
If you booked the 25K miles flight, it likely would have ticketed instantly. Then, when the 80K one finally went to ticket, it would be after you had redeemed 25K. So the 80K one wouldn't ticket as you would have insufficient miles for the purchase (and if you didn't do something ASAP then the whole reservation would simply cancel itself).
