If booking a flexible rate, it doesn't matter as you can decide how you want to pay after your stay.

If booking prepaid rates, then you are at the whim of the hotel as to whether they want to use DCC, and you will have to accept the exchange rate on the day they decide to charge you, which can be any time between booking and staying.

You can of course contact the hotel to dispute a DCC transaction, or to force them to charge your card immediately if you think the exchange rate will change in an unfavourable direction before your stay.
