Just get a cab for the peak. Neither the #15 bus nor the peak tram will be running before sunrise I believe, although make sure the fog isn't in. From my harbour view room at the Ren, I couldn't see the other side when I stayed there last month. It's an odd part of town although a local contact introduced me to Kasa (Shop 103, 1/F, Shui On Centre, 6-8 Harbour Road, Wan Chai).
It's local style, just across the road (more at the Hyatt end) and serves what he deemed was HK food.
There's an elevated walkway that runs from the lobby of the hotel and there's a bunch of bars up there if you head south east, but everything I saw was western.
One other tip - don't bother taking the free shuttle from the airport train station to the hotel - you go a long way East to start with before finally looping back to the Renaissance, which is something like the 9th stop. A cab will be many, many times faster and probably no more than HK$40.
