I usually use matrix.itasoftware.com to play around if I'm trying to maximize miles. Type "c:ua+" in the advance routing code (multiple UA-only flights) and be sure to select "Up To 2 Stops". If you do this with a round-trip search, it will likely only give you 2 stops in one direction and one stop in the other. Try doing two one-way searches to find a 2-stop itinerary each way.
Mojos_Pride I am going to add one tidbit to the above. You may also want to try "UA UA UA" or "UA UA UA UA" as your advanced routing code. This is called broken ticketing where the system put's one way fares together. You may end up with DEN-SAN-IAH-XXX-EWR. Back when I was qualifying off segments I lived off routes like that. I used to fly ROC-CLE/EWR-IAH-CLT all the time, and once went to my in laws for thanksgiving SAN-SFO-ANC-DEN-ORD-ROC

Once you find something on ITA it can be a little tricky to get it to come up on UA.Com or Google Flights - You are going to need multi city mode but it can be done so keep tinkering.
