Yes, the FAs should respect that on an overnight flight they should be quieter than not. But you have to expect some ambient light and noise. That has been my experience on every flight I've ever taken.
But when they don't, the wrong answer is "get a better eyeshade and earplugs."
I flew a redeye a week ago, and the pilot and FA's did it right - pilot came on the PA before we departed to give us the flight info, and promised minimal disruptions en route - and both the pilots and crew delivered.
