LOT's 787s have a 3-class configuration, so indeed on longhaul flights Economy Premium is a decent option - 2+3+2 seat config compared to 3+3+3.
Keep in mind that as LOT is waiting for a few additional 787-8s and 787-9s, their EWR flights will initially be operated by EuroAtlantic Airways on 767s, which means the seat configuration will most probably be different than on the 787s.
