Yes, the FAs should respect that on an overnight flight they should be quieter than not. But you have to expect some ambient light and noise. That has been my experience on every flight I've ever taken.
My eyemask works fine but I've yet to find ear plus I can sleep in. Maybe because I tend to sleep on my side. I expect light, my neighbor could decide to read a book. I don't expect loud chatter. Engine noise is constant so it is easy to get use to. Loud chatter and laughter is not.

I think the FA was trying to convey that the job is so terrible (or terribly boring) that they "have to" do something to make it more fun to pass the time. Pushing out a meal service at the beginning and end of a flight and doing nearly nothing for the remaining hours in between and getting so bored that you don't know what to do with yourself does not gain any sympathy from me.

I will say that for the most part, FA's do tend be quiet, but there's a fairly decent percentage of flights where this isn't the case.
