Yes, this is indeed a pretty easy upgrade. I've seen empty seats between SJC-GDL a few times. I've also seen them upgrade passengers with disabilities from Y to F. Don't count on the meal being good though. All of the butternut squash ravioli I've had in my life has been while flying ex-GDL.
