My nitial question is, of these airlines, Air Canada, New Zealand, Air China, Asiana, and United, which would provide the best experience in business class to SYD? I even saw some "F" Saver availability on Air China for the return to LAX and SFO. Would Air China in First be worth it, even though connecting through PEK?

My suggestions ranked by preference:
United: the 2-2-2 configuration on the 787s UA flies to Australia are good for couples like you and your wife. Sounds like your best option. If you're going to be in Australia for a while, maybe fly into MEL and out of SYD (or vice versa) and spend some time in both cities.
Air Canada: great business seats, 1-2-1 configuration but the way seats are angled may make difficulty for you and your wife to talk during the flight.
Air New Zealand: heard good things about their business class but very difficult to find award space.
Asiana: lots of positive reviews, but requires connecting in ICN which adds travel time
Air China: I strongly recommend scratching Air China off your list. Connecting in PEK or any mainland China airport is a bad idea, plus there are some reports about Air China cancelling award tickets after booking.
