Thanks so much for the input, everyone; very helpful! My takeaway is that while LOT does not generally check weight, they will sometimes check at the gate (although they are not stringent). As a result, best to pack as close to the limit as possible (and obviously try for under the limit!).

Also, that Easyjet is constantly finding new and improved ways to nickel and dime
