I lived in Europe for 6 months not too long ago and travelled extensively incl to France, and can tell you that the US-issued EMV cards will just prompt a slip of paper to come out and for you to sign at most merchants.......just like any other country.

My BofA company card (Visa) allows/prompts for a PIN usually in place of signing, which is fine. Unattended terminals, like museums, will prompt for a PIN on my personal Visa, which I have as well.
