Logic In Why Hotel Shows Unavailable For 1 Night But Available For 2 Nights?

I was recently booking a Hilton 1 night stay. Let's say for exampel checking availability on 6/1. It showed sold out. However, when checking availability for the same hotel for 6/1 with a 2 night stay it showed as available.

Now I know the hotel would prefer that I stay 2 nights, but why would they turn away the one night business?

Only 1% of travelers would go to the trouble of checking the 2 night stay, booking that, and then changing it to a 1 night stay on check in.

Just don't understand the logic in why they do this and turn away that 1 night stay?
