I'm looking at a DUB > TYO return flight for €420 but the layover in XMN is just over 2hrs which obviously wouldn't be enough time to collect bags/recheck in and go through immigration/security.
Go for it! I used Xiamen to go from Ams to Toyko last year. I found it to be a perfectly good airline; good food, nice crew. Not the best but certainly not the worst of the Skyteam family.

The connection in Xiamen, however, is a pain in the ... as you need to:

1. Pass though immigration (if checking in with KLM in Ams, you will not receive your boarding pass for the Tokyo flight however the Chinese police have the passenger lists of Xiamen's flights so they will be able to identify you; the process may take 5-10 mins to complete)
2. Pick up your bags from the carousel
3. Go to Xiamen checkin and recheck the bags
4. Pass though security

It sounds like it might take forever but the terminal is not big so you can complete these steps fairly quickly. As it turns out, you can only enter the departure area within 2 hours of departure, so having a long layover in this airport is a disaster - a two hour connection sounds ideal to me.
