Don't waste time on the wing

Hongkong is a magical place, I would still suggest, if you are adventurous, hopping on the airport express to Kowloon, going to the Kowloon water front w. taxi for a nice view across the harbour of HK island and heading back (happy to elaborate more if you choose this)
