I'm a bit confused as if a ticket is booked a few months in advance, if they receive the voucher now, would they not ticket until 2 weeks before the flight?
It's entirely dependent on the volume of vouchers they receive. If there is a backlog then they are processed based on the date of the first flight which is why it's important (as stated in the Wiki) to write the date of the first flight on the envelope. If there's no backlog it will probably be processed straight away even if your first flight is some time away.
