JFK - MAD flight with frequently changing business class cabin

Hey there, thought maybe someone who more regularly flies Iberia could answer this.

I have 2 AA-redeemed business award tickets on Ibera from JFK to MAD, in late July on flight 6250. Because we booked via American, I can't see an official seating chart and can't change seats without a phone call to Ibera (varying quality customer service there), but by all accounts the plane will be an a340-600

Given that this is, in fact, going to be our honeymoon, we'd really love to sit together in the "honeymoon" seats (E and G). However, as best I can tell, they keep changing between us flying in a plane with the old 2-2-2 configuration and the more modern 1-2-1 staggered configuration; every time this happens, we get placed automatically on opposite ends of the cabin without notification.

Is this typical for Iberia for a flight five months out, and I should just expect that as it gets closer they'll settle down and I won't need to check in every couple of weeks, once I've got things locked in place? As a general matter I also hope/assume we'll definitely have the newer business plus configuration, though it would be annoying if we don't.
